The menu takes guests on a journey through Norway, with ingredients sourced from coastlines, mountains, forests, and farmland across the country, shaped by the techniques and traditions of French cuisine. Each dish is created with precision and respect for the origin of the ingredients, supported by a style of hospitality where food and service are experienced as one cohesive whole. The name À L’aise is French and means to feel comfortable, relaxed, and present.
Restaurant À L’aise was established in 2017 and is led by Danish chef Ulrik Jepsen and Mia Kondrup. Jepsen brings experience from several renowned Michelin starred restaurants across Europe and works at the intersection of classic French gastronomy and Norwegian seasonal produce. The restaurant is the only one in Norway to serve Canard à la Presse, prepared and pressed tableside as an integral part of the meal. In 2023, À L’aise received its first Michelin star, the same year Mia Kondrup was awarded the Michelin Nordic Countries Service Award.
